Malga della Carnia cheese, made from raw milk, is our product par excellence together with other products from Carnia that preserve an enduring wholesomeness.

Malga Carnia SAURIS Cheese - Young

(Aged for 2-4 months) This cheese has a sweet aftertaste and maintains the strong, decisive taste of fresh raw milk.

Malga Carnia SAURIS Cheese - Aged

(Aged for 5-11 months) Intermediate maturing highlights the diversity of the pastures. With this cheese you get a hint of the grasses that the cows grazed on.

Malga Carnia SAURIS Cheese - Mature

(Aged for 12-17 months) As a result of the cold and natural temperatures of the cellar, this cheese maintains a soft texture even after a year of maturation. This cheese has excellent floral flavors and aromas.

Malga Carnia SAURIS Cheese - Very mature

(Aged for 18-36 months) The very best accounts of past events are told by very mature cheeses that carry their origins. Due to the transformation of certain elements and the slow aging process, this cheese may carry hints of licorice and hazelnuts.

Cow’s milk ricotta

(smoked using beechwood) When smoking isn’t only an age-old method for preserving a product but also way of adding flavor and fragrance to food.

Mountain goat's cheese (pure goat's milk)

(Aged 3-12 months) It has a sweet, light taste just like the milk with which it is produced.

Very mature goat's cheese 24-36 months (pure goat's milk)

(Aged 24-36 months) The long aging period produces unique flavors, intense, yet sweet. Most gratifying for a cheese which is difficult to age.

Mountain Pecorino cheese from raw milk

(aged 3-12 months) It has a strong, round taste, right from the start it presents the strong scents that only a rich sheep’s milk can transmit.

Formadi Salat

Stemming from an ancient method of preserving cheese, the formadi salat (salted cheese) carries with it all the aromas of the brine starter culture, a composite of milk and salt. Stored in large wooden vats, this interacts with the final product giving it fragrance and aroma.

Formadi Frant

Pure cow's milk (aged 2-4 months). A mix of 'crushed' cheeses then mixed with cream and pepper in order to reproduce a bygone recipe. The ideal accompaniment for sweet foods.

Blue vein cheeses

We offer a small range of blue cheeses produced with much passion and in compliance with old processing methods.

COW BLUE

Pure cow's milk (aged 3-9 months). It has a sweet, decisive and distinct taste thanks to the precise ripening process and delivers varied nuances.

GOAT BLUE

Pure goat's milk (aged 3-16 months). This is where sweet and spicy blend exquisitely.

Artisanal Cheeses

The desire to experiment doesn’t end with the natural process of refining cheese at high altitude. Three new products have been added to the wide range of artisanal cheeses we offer.

The Formadi Beer

(aged in beer) The objective was to combine two local products: cheese and beer in order to create a product with a unique flavor. Available in cow or goat’s milk.

Hemp Cheese

Hemp cheese made with the same hemp used to produce the famous Zahre beer. Available in cow or goat’s milk.

Greiser Khase

Cheese matured in a mix of aromatic herbs from Sauris: Agastache cana, hyssop, mint, Allium ursinum, nettle, tarragon, melissa, Artemisia vulgaris (mugworth), wild fennel and chives. Available in cow or goat’s milk.
